Choose the experience, not the accolade
A tasting menu is a sequence designed by the kitchen, so look at the restaurant’s current sample menu and style before reserving. Consider how adventurous you want the meal to be and whether everyone at the table is comfortable with the format. Several hours of dining can be enjoyable when it is the main event, but awkward when a theatre booking or early flight imposes an immovable finish. Ask the restaurant for a realistic duration.
Agree the details in advance
Contact the team about allergies, preferences and any ingredients you cannot eat before paying a deposit. Some adaptations need advance notice or may not be possible. Ask whether the whole table must take the same menu and whether a shorter lunch option is available. Food, wine pairings, non-alcoholic pairings and supplements may be separate decisions. Confirm the total format rather than comparing only a headline menu price from an old review.
Make arrival and departure simple
Read the dress, child and cancellation policies, and check how late arrival affects the booking. ION Harbour, Risette and Le GV publish different arrangements; one restaurant’s policy should not be transferred to another. Allow time to find the correct entrance, particularly in Valletta’s older streets. Arrange transport if drinking and keep the evening clear afterwards. A special meal is easier to enjoy when the practical decisions have been settled before the first course arrives.
